By then way, dijon mustard does not last any less long as far as I know. It has wine, which is acidic and acts as a natural preservative. When the first couple ingredients listed are things like distilled vinegar, water, peppers, or salt, you have a little freedom. I never refrigerate my bottle of Sriracha. Honestly right now our mustard and ketchup is in the fridge, but only because they are bottles I took from when my family's restaurant closed. It's "expired" so I might as well refrigerate it lol.
